Dal Bati -a traditional dish from the state of Rajasthan in India. Hard wheat balls are baked and then eaten a spicy mix of lentils. It's topped with lots of ghee which makes it extremely flavorful. Rajasthani food is one of my favorite and I have mentioned this before when I shared the recipe for Gatte Ki Sabzi.
Steps to make Daal Baati with Baigan Sabzi:
- Firstly, in a large bowl take 2 cups of wheat flour, ¼ tsp salt, ¼ tsp baking powder and ¼ cup ghee.
- Mix well making sure the dough is moist. - now add water as required and knead the dough.
- Pinch a small ball sized dough and keep it aside.
- Now take a steamer or dhokla stand. Take dhokla plate grease it with oil and keep Ball size dough in plate.
- Now give steam for 15 minutes or till it's size get double in shape. After that switch off the flame.
- After cool down Cut in cubes and Deep fry in oil and fry till it colour get change.
- Now your Baati is ready.
- Now take pressure cooker add all daal and pinch of turmeric powder some salt and mix it well. cook upto 3-4 whistle and switch off the flame.
- Now take a kadai add 1 tsp oil add some mustard seeds, cumin seeds. After that add curry leaves garlic and green chilli sauté for 2 minutes. Then add cooked daal and some salt and boil it for 2-3 minutes and switch of the flame.
- Now make Brinjal sabzi. Take any type of Brinjal. Wash it properly and cut in cubes.
- Now take mixer jar add green chilli and garlic make paste.
- Take a pressure cooker add 1 tsp oil after that add green and garlic paste and some turmeric powder and saute for 2 minutes.
- Then add brinjals some garam masala and coriander powder and sauté for 1-2 minutes.
- After that add 1-2 tbsp water add some salt and coriander leaves and mix it well.
- Cook till 2 whistle and switch off the flame.
- Your Brinjal sabzi is ready.
