This is a baked, spicy lentil cake made with rice and different lentils fermented batter mixed with spices. Handvo (or Handwa) has been one of the most requested recipes and we just had to oblige.

- Wash rice and all dal for 4 to 5 hours. Later place it everything in a mixer jar blend smooth coarsely.add curd turmeric salt and rest for 1 hour.
- After 1 hour add grated bottle gourd into it add peas green chili and ginger salt baking powder turmeric red chilli powder and sugar and mix it. Mix wel the batter it should be thick like idli batter consistency.
- Take a pan add oil once it gets heat add mustard seeds cumin seeds once it gets splutter add hing curry leaves sessame seeds. Pour this tempering over handva batter. Now place this batter into tawa and close the lid and cook for 10 Minutes
- Flip it gently and cook again for more 10 minutes in low flame. Until it gets crisp. Cover and simmer for another 5 minutes until the handvo are cooked completely. Check with tooth pick until it comes clean

- Note- this handva batter can even fermented over night adding curd.and to avoid eno and baking soda. You can also add other vegetables of your choice like grated carrot cabbage.
