Sabudana kheer is a sweet liquid based dish prepared using tapioca and milk. A variety of Kheer/Payasam is usually prepared during any festival or an occasion.'Sabudana' or 'Sago' is called 'Saggubiyyam' in Telugu and 'Sabbakki' in Kannada and 'Javvarisi' in Tamil. I always use the variety called nylon sago when I prepare payasam and also for 'Saggubiyyam(Sago) Upma'. Saggubiyyam Payasam or Javvarisi Payasam is a creamy and delicious South Indian dessert or kheer.

Instructions to make Sabbakki payasa (Sabudana kheer):
  1. Soak Sabudana in water for two hours.Drain off the water untill all the starch has gone off.
  2. Boil milk in heavy bottomed vessel.Add soaked Sabudana to this and stir it continuously untill it gets cooked.
  3. Now add sugar and stir it.
  4. Add saffron soaked in milk.add elaichi powder and stir it.
  5. Garnish it with raisins !!! Serve it in serving bowl hot or chilled!!
