  7. Cut each squash in half and scoop out the seeds. Drizzle with the leftover oil from frying the sage, then scatter with the crispy sage leaves.

Let the sage get crispy (but not brown) before transferring it to a plate covered with a paper towel. Sprinkle the fried sage lightly with sea salt and set it aside.
