- Prepare 1 cup rice, soaked for 20 mins
- Take 1 cup sweet corn

Now add in the chopped tomatoes and mix them all with the yummy masala. These are the spices we will need for this biryani. Instant Pot Tomato Rice is an easy one pot Rice dish which is quick, flavorful, spicy and super delicious. I made this spicy but you can adjust the spice to your taste.
Instructions to make Tomato and corn biryani:
- Heat oil in a pressure cooker. - Add the garlic, bay leaf, cinnamon, cloves, cardamom and stir-fry for 20 seconds.
- Add the onions and saute well. - Add the ground paste and cook till the oil starts to float on top.
- Add the rice and fry 2 minute. - Add tomato puree, corn and salt
- Stir well and close the lid.
- Pressure cook for 10 minutes over low flame and keep aside until the pressure drops.
- Add the fenugreek leaves and mix gently. - Serve hot with side dish of choice.
- Garnish with pomegranate seeds and fresh mint leaves.
Using just ripen red vine tomatoes gives the best taste, if using sour tomatoes then reduce the quantity as we don't want the.
