Take it out of the microwave when you see the cake rising over the cup and it stops rising. This is the base recipe, you can customize it as per your liking. I am planning to do few more microwave cakes like banana, carrot soon. You can double or triple the recipe if you need more but make sure you add the milk very slowly.
Instructions to make 2 Minutes Chocolate Cake:
- First mix whole wheat flour/maida, cocoa powder, baking soda, baking powder, salt. Sieve all the ingredients in a bowl. Combine all the dry ingredients well.
- Now take a bowl and pour hot water and instant coffee powder and make tication. Now take another big bowl for making a batter add oil and powder sugar mix well until we get the smooth texture.
- Now add coffee tication in the oil and sugar mixture and combine together, then add dry ingredients in 2 batches and mix well. At last, add vanilla essence and give a small mix. Remember not to beat the batter a lot.
- Now take Appam pan and place on low flame grease with ghee/butter/oil and pour 1 Tbsp of batter in each and cover with a lid. Let it get baked for 2 mins then turn around and bake for 20-30 secs. Then take out in a plate and bake the rest of the batter, in the same way.
- Now lets make the ganache for frosting. For the frosting - first heat the fresh cream and pour it on chopped chocolate. Mix it so that the chocolate melts and the mixture becomes smooth.
- Place Appam Cakes on a wired rack and pour liquid ganache on it. - Now place the rest ganache in the fridge to chill to make a whipped ganache.
- Take the remaining ganache from the fridge and add little whipped cream and whisk or beater it to make a light whipped ganache. Frost it on the cake and dust with cocoa powder and garnish with some silver balls or of your choice.
- You can refrigerate the cake before serving. I like to enjoy it as it is with light frosting.
