There are variety of allam pachadi made and this is my sis MIL's. Ginger chutney(Allam Pachadi) is a Good accompaniment for idli,dosa,appam, pesarattu, chapathi roti's and curd rice. Ginger cures many diseases and health. Allam translates to Ginger in Telugu and Pachadi means fresh pickle or chutney (a condiment).

Instructions to make Allam pachadi/ginger chutney:
  1. Heat 1 tbs oil in a pan. Add chana dal, urad dal and red chilli. Fry it well until it becomes golden brown.
  2. Keep aside. Now in the same oil add ginger pieces and fry it well. Let it cool down.
  3. Mix all the above ingredients together in a blender. Add tamarind pulp, salt and jaggery Grind it well. Add little water to make smooth paste.
  4. Remove the chutney into serving bowl. Heat 1/2 tbs oil in a pan. Add mustard seeds as it is started cracking add cumin seeds and pinch asafoetida. Switch off the gas.
  5. Pour this tadka over the chutney. Mix well. Serve with pesarattu.
