- In a pressure cooker add potatoes, beetroot, carrots and add water and bring it to pressure for 4 whistles to boil all vegetables. Cool and peel the skin of potatoes. Mash all vegetables and set aside to cool.
- In a wok heat oil and add panchphoron. Add the mashed vegetables and fry for couple of mins. Set aside.
- Add roasted cumin powder, red chilli powder, garam masala, salt, raisins and mix very well. Add besan to give a shape.
- In a different bowl add besan and little oil, salt and water to make the batter. Set aside.
- Make oblong shapes to the vegetable mix. You can choose your own shapes. Dip in the besan batter.
- In a wok heat oil and fry the Vegetable chops in batches and fry until golden in colour.
- Plate with Kasundi and enjoy hot.
