- Take a heavy bottomed pan, add the grated fresh coconut and grated jaggery. Allow the jaggery to melt and cook.When the mixture is thick, add one teaspoon of ghee and cardamom powder and mix well. Turn off the stove.
- Clean banana leaf. Smoke this leaf on flame for a few seconds so that it becomes easy to fold.
- Make the rice dough to small balls.Take a piece of Square shaped banana leaf (if not cut it), keep a ball of rice flour dough at the center. Dip your finger in a bowl of water and flatten the dough on the banana leaf.
- Place a tablespoon of jaggery coconut mixture on it and fold the leaf to seal the edges. Repeat the same for rest of the dough.Steam this in an idli steamer or a cooker without weight for 10 – 15 minutes.
Ela ada is favourite snack for everyone It can also be made with brown rice or wheat flour instead of rice flour. Some even use health mix powder/sathumaavu to make ela ada.
