  2. Get 3/4 cup broken wheat (dalia)
  3. Get 3/4 cup semolina (rava)
  4. Take 2 tbsp chana dal (split bengal gram)

  6. Take 1 cup curds (dahi)
  7. Take 1/2 tsp baking powder

  12. Take 2 tbsp coarsely mashed green peas

  15. Prepare 1/2 tsp mustard seeds (rai / sarson)
  16. Get 1 pinch asafoetida (hing)
  17. Prepare 1/2 tsp finely chopped green chillies
  18. Prepare 1/4 tsp ginger (adrak) paste
  19. Make ready to taste salt
  20. Prepare 1/4 cup chopped coriander (dhania)

IF using fresh idlis, let i cool completely and then crumble it. heat oil in a pan and pop in mustard seeds, urad dal. Vegetable Idli Recipe is the perfect Indian breakfast. Instructions to make Vegetable idli:
  1. Dry roast the broken wheat and semolina on a tava (griddle) till they are golden brown in colour. Remove and keep aside in a bowl.
  2. Dry roast the chana dal and urad dal on a tava (griddle) till they are golden brown in colour. Add ½ cup of water and allow to cook on a slow flame till they are tender.
  3. Mash the dals lightly and add to the broken wheat and semolina. - Add all the remaining ingredients and enough lukewarm water to make idli batter. Keep aside.
  4. Heat the oil in a small pan and add the mustard seeds to it. When they crackle, add the asafoetida, green chillies and ginger paste.
  5. Add the onions and sauté till they turn golden brown.
  6. Add the carrots, french beans, green peas, salt and a little water and cook
  7. Covered till the vegetables are tender and the mixture is dry.
  8. Switch off the flame, add the coriander and mix well.
  9. Divide the mixture into 24 equal portions and keep aside
  10. Place a spoonful of the idli batter into each greased idli mould.
  11. Place a portion of the vegetable mixture over the idli batter.
  12. Pour a spoonful of idli batter to cover the stuffing on each idli mould
  13. Steam in a steamer for 10 to 12 minutes.
  14. Repeat steps 1 to 4 to make more idlis.
  15. Serve hot.
