I'm using Foster Farms new Simply Raised Free Range Chicken thighs in this recipe. Heat the oil in a frying pan over a medium heat and cook the onion, garlic and chilli for a few mins until softened.

- Heat a drizzle of oil in a sauce pan (medium-high heat for 3-5mins) Shallow fry the thighs(Skin down) for 5-10mins. Meanwhile preheat the oven at 220’C for 10 mins. Pour in the blend mix and simmer for 3-5 mins at high heat.
- Place the thighs in a ceramic oven dish. Top with fresh thyme. Cover loosely with oven foil and place in the middle rack and cook for 25 mins. Remove cover after 25 mins and cook for further 10 mins at 200’C
