- First wash the mangoes and wipe it with dry cloth.
- Peel off the skin and then grate the raw mango using grater. Typically we keep the grated mango aside in sun for 4-5 hours so that it gets dried and all the juice evaporates.
- Once that is done, heat oil in pan, add mustard seeds, hing, methi seeds and switch off the flame and keep it aside.
- Add chilly powder, salt, turmeric powder to the grated mango. On top of it pour the oil mixture.
- Mix it nicely using a bigger spoon so that all ingredients are mixed. Transfer the mixture into a glass jar or plastic jar.
- Now grated mango pickle is ready
