Chevda is white in colour we all know that right. So wash the potatoes strips until the water comes out clear (this is same as how we do for washing dal).
  4. Now immerse the starch free strips in chilled water and add 1/2 lemon juice and keep aside for 15 minutes.
  5. After 15 min, take out the strips and spread on a strainer to drain all water. It takes about another 15 minutes. For faster drying, you can squeez them out also.
  6. Now take a wok or kadhai and heat oil to sufficient hot (Not too hot nor too cool).
  7. Fry all dry fruits and curry leaves to a golden colour and keep aside.
  8. Now in the same kadhai to suficient hot oil, add the potato strips..The moment you add the strips a lot of bubbles will come. Do not stir with spatula now and wait for the bubbles to reduce. Once the bubbles are reduced, stir them and fry for 3 to 4 minutes. Your crispy potato strips are ready.
  9. Take out the fried potato strips onto a plate and let it cool a little.
  10. To the potato strips now add all dry fruits and sprinkle salt, black salt, chat masala and powdered sugar and mix all Ingredients well. Your delicious chevda is ready now.
  11. You can eat the chevda right away or store in an airtight container for later consumption.
