- Make ready 2 cup chopped coriander leaves
- Prepare 1 cup Mint leaves
- Make ready 1/4 cup Garlic
- Take 1-2 Onion
- Prepare 1 small piece of ginger
- Take 2 green chillies
Serve this instant pot vegetable biryani with a side of raita like this mango mint raita or spinach raita! Layer ginger garlic paste, onions and mint leaves. This vegetable-packed biryani is a one-pot dish that's aromatic, flavorful and super tasty. I consider it veg biryani - it's more flavorful than a pulao.
Steps to make Vegetable Mint Biriyani:
- For green gravy, grind all ingredients together and keep it ready.
- Take a pan. Add oil and ghee. Add all dry masala, turmeric and garam masala. Add green gravy, curd and all vegetables. Let it cook on low flame.
- Take a another vessel. Cook rice in that with salt. Don't overcook. Once it is half done, drain the water and let it cool.
- Add rice in the green gravy. Cook it on low flame. Add coconut milk. After some time, mix it gently. Sprinkle fried onion and mint leaves.
- Serve hot with Raita and papad - (see recipe)
- Note : I've prepared in rice cooker. If you are cooking in pressure cooker. Don't give whistles. It taste great next day. So if you are having biriyani today and if there is leftover, keep it in fridge. Next day, make it hot again.
My recipe does have mint but not yogurt - I. Add mint leaves, coriander leaves, green chilly and mix well. This veg biryani is prepared using commonly available fresh vegetables. Therefore, it is nutritious and healthy. Biryani is our all-time favorite dish.
