- Get 100 g spinach

- Get 2/3 tablespoon sugar
- Get 1 1/2 tablespoons ground sesame seeds
The sauce was versatile and I imagined it would be suitable to be paired with other fruits. In a bowl, combine the tofu, tahini, usukuchi soy sauce, sugar, and coarse salt, and grind until smooth. Using tongs, transfer the spinach and tofu mixture to a serving bowl, leaving the liquid behind in the pan or wok. Drizzle with the sesame oil, and add more soy sauce as desired.
Steps to make Spinach with Tofu sauce - Shiraae-:

- Drain the tofu using the strainer for more than 30 minutes.

- Blanch the spinach for 20 or 30 seconds, and shimeji and carrot for 10 seconds.

- Mash tofu until creamy, and mix with tofu sauce.

- Dress the spinach, shimeji mushrooms and carrot with the tofu sauce. ※Sesame seeds can be replaced with walnuts or peanuts. You can use peanut butter, too.
Serve with rice or other grains, or noodles. You may also use it as a filling for whole wheat pita bread. We are making healthy nutritious Shiraae, mixed tofu and spring vegetables. The aroma of the toasted sesame seeds brings out the flavor. Mentsuyu or soy sauce can be substituted for the dashi soy sauce.
