You can go all creative and team this up with I have used the famous Mangalorean vegetable masala powder which is available in most Mangalore. Sometimes, jackfruit is soaked in syrup and canned. Instructions to make Bikna Masala (Jackfruit seeds):
- In a pressure cooker add some water and the jackfruit seeds with a pinch of salt. Wait for 1 whistle and switch off the gas. Unskin the jackfruit seed, chop it fine and keep it aside.
- In a kadai pour some oil and wait for it to heat up.
- Add Cumin seeds and curry leaves and wait once its starts to splutter.
- Add Onion and garlic finely chopped and saute till light brown.
- Now add the turmeric powder, Chilli powder, Coriander power and salt. Mix well.
- Last add the jackfruit seeds that was finely chopped and mix till the masala is coated. In a slow flame cook the dish for another 10 mins. Add 1/2 cup water as you wish.
- Once the seed is well cooked switch off the flame and garnish it with Coriander leaves.
