  1. Get 500 gm Raw jackfruit
  2. Get 1 big size potato
  3. Make ready As needed Mustard oil
  4. Take 2 tbsp onion paste
  5. Make ready 1 tbsp ginger garlic paste
  6. Take 1/2 teaspoon cumin powder
  7. Take 1 bay stick
  8. Take 3 Cloves
  9. Make ready 3 Cardamom
  10. Take 2-3 green chillies
  11. Prepare 1/2 turmeric and red chilli powder each
  12. Take 1-2 dry red chilli
  13. Take 1 teaspoon garam masala
  14. Prepare 1 teaspoon ghee
  15. Prepare to taste Salt and sugar
  16. Make ready 1 chopped tomato
  17. Get 1 teaspoon cumin seeds

Use any that you have and add some garam masala. Cook longer to infuse the Jackfruit with flavor. Jackfruit curry, a perfect combination of natural starch harmonizing with Sri Lankan spices and coconut milk to give you a creamy vegan/vegetarian dish. Jackfruit trees are a common sight in most gardens here, once the fruit is ripe, they turn into a beautiful yellow-orange hue, giving off a sweet.

Instructions to make Jackfruit curry/ echor kosha:
  1. At first cut the raw jackfruit into cubes. Make sure your hand and knife are well grease with oil. Now place the jackfruit cubes in pressure cooker and cook for 2 whistles and drain the water and keep aside.
  2. Now cut the potato into cubes and wash properly. Heat some mustard oil in a pan. Fry the potato cubes in medium heat till get golden brown. Take out the potato pieces. Now in the same oil fry the jackfruit cubes for 2-3 min and take out from the pan.
  3. And in the same pan add some mustard oil if required. Add whole spices, cumin seeds, dry red chilli. Now add onion paste, ginger garlic paste one by one. Add salt to taste, turmeric powder, red chilli powder, cumin powder and chopped tomato. Cook them well until the raw smell goes off.
  4. When the oil will start to separate from the spices add the fried potato and jackfruit cubes. Mix them well. Add green chillies. Cook them for 3-4 minutes. Now add lukewarm water. When the the gravy will to thick and garam masala powder. Before turning off the oven add 1 teaspoon ghee.
  5. Finally the Recipe is ready to be served with hot steamed rice or paratha.

I never knew that until my MIL cooked once after marriage. I loved it the very first time when she made curry with it. But everything is worth to have this curry. My MIL made this curry when I was there in Chennai last week and I clicked to post this recipe here. The jackfruit is believed indigenous to the rain forests of the Western Ghats of India.
