I am not calling this Efo Riro, because Efo riro requires a lot more finesse and the flavor profile is a bit different. [due to the time it takes to bleach the oil, the presence of Iru (locust beans) and the absence of tomatoes in Efo Riro. Efo Riro needs no introduction as it's one of the most popular vegetable soups in Nigeria and an absolute favourite of the Yorubas.
Instructions to make Efo Riro (spinach Stew):
- Blend one onions with tomato and pepper. Chop the other onions
- In a pot heat oil add onions and locust beans
- Add the cow leg dry fish and fresh fish
- Add the blended tomato mix and allow to cook star occasionally
- Add Maggi salt and cray fish
- Pour hot water on your spinach, drain the water off and add spinach to cooking stew stir for 3min
- Add cow leg dry fish and fresh fish stair for 1min and add stock
It's quite an easy dish to prepare, as long as you follow the major instructions and requirements. A major rule is; using tomatoes for Efo Riro is an absolute No No! Growing up my favorite stew was efo riro, that's stirred spinach for an exact Yoruba to English translation. My favorites were made by my mom and my faux aunt, Mummy Hamed. Mummy Hamed made the most succulent of efos.
