This vada reminds me my childhood memories from the deep of my heart. During my college days, a new trend of sorts sprang up all over. Turned on my favorite music and started frying Onion fritters (Ulli Vada). As the onion fritters came out of the oil crispy and crunchy, we both dug into it.

Instructions to make Ulli / Onion Vada:
  1. Chop onions, green chillis, curry leaves and ginger to very thin slices.
  2. Make a consistent batter out of gram flour, egg, and a little water. Add the above chopped ingredients and salt to the batter.
  3. Preheat oil in a pan. When the oil is hot enough, pour 1 tbsp of batter (for each vada) to the oil, and deep fry.
  4. Drain the excess oil in the vadas by using a ladle with holes.

We emptied the plate and then lazed on the couch. Onion Vadai (Ulli Vada, Vengaya Pakoda, Ullipaya Pokodi, Onion Fritters) - A quick snack made with onions and chickpea flour.
