Saute till onions are golden brown then add chopped tomato give it a good mix. Cook till tomatoes are soft and mushy.Now add washed and Soaked white vatana in the cooker. Add turmeric powder and chhole masala give it a good mix. Add salt and water. pressure cook it for 4-5 whistle
  4. For Green Chutney; In a blender jar add, pudina leaves, coriander leaves, green chillies, garlic cloves, ginger, salt, lemon juice and Cumin Powder. Blend it in a smooth Puree. Green Chutney is ready.
  5. For tamarind chutney:Soak for 2-3 hours tamarind to make it soft and mushy.Now grind and strain the soaked tamarind two to three times to get a clear tamarind extract.In a kadhai add tamarind extract and jaggery. Cook till Jaggery is completely melted and mixed with tamarind extract.Now add salt, garam masala, red chilli powder and cumin powder. Switch off the flame. Tamarind chutney is ready. Let it cool down completely and store in an air tight container in refrigerator.
