- In another bowl add dryfruits and 1 teaspoon ragi flour mix it.
- In another mixing bowl add curd, oil, vinegar, vanilla essence mix well now add ragi flour mixture and milk in batches.
- Make ribbon consistency batter,add half of the chopped dryfruits mix well.
- Then in baking tray arrange butter paper apply oil, pour this batter,sprinkle rest of dryfruits and tap twice.
- In preheat oven bake it for 30-35 mins On 180 degree.
- Cool it completely and demould it. Sprinkle powder sugar.
- Pour melted dark chocolate in piping bag and garnish on cake
- Sprinkle pumpkin seeds and serve it.
I baked these fresh fruit cake slices with Oats and finger millet or Ragi which are easy to bake, moist, chewy and healthy. Add the wet ingredients into the dry ingredients and fold it lightly to mix it well. To make oats dry fruits ladoo, I used organic oats and mixed dried fruits and a very small amount of nuts. I have also used cornflakes to give a crunchy touch and a very small quantity of rock sugar since my kids love them. Roasting ragi ensures that it dries off the last bit of moisture from ragi and ensure for a longer shelf life of the ragi.
