Kunafeh, also spelt varyingly as kanafeh and knafe, is a Middle Eastern sweet made from shredded filo pastry (called Kataifi/Qatayfi pastry) stuffed with delicious gooey cheese drenched in scented sugar. - For Sugar syrup: - - In sauce pan, add sugar, water. Cook until sugar is dissolved.
- Add green cardamom and lemon juice, cook it till it thickens & set aside.
- In a bowl, add pheni (i don't use vermicelli here) and crush well.
- Add butter and mix properly.
- Taka out half quantity of butter coated pheni in a separate bowl and reserve for later use.
- Add a pinch of yellow food color, mix well & set aside.
- In baking pan, add colored coated pheni and spread evenly.
- To a pan, take 2 cups of milk, add 4 tbsp of sugar n boil. Add 3 tbsp corn flour and allow it to thicken. Cool it.
- Spread this mixture on pheni and spread cream cheese over it.
- Add grated mozzarella cheese and spread it, again add a layer of reserved butter coated pheni.
- Bake in preheated oven at 180° for 20-25 minutes.
- After baking, pour generously warm sugar syrup and garnish with coconut.
