Instructions to make Fried rice with pepper meat:
- Cut the cow meats and cook with spices including thyme and chopped onion. If done, fry in a deep fryer at 170 with groundnut oil. Once it’s done, fry peppers on a pan and pour the meat stock. Add up the spices, fried meat and chopped onions and turn off fire.
- Parboil the rice. Rinse the parboiled rice and put it in colander. After that, fry the parboiled rice in a frying pan containing oil and stir. Add curry, maggi to change the color of the rice. After it has been fried you keep it aside.
- Fry your veggies (carrots, peas, green beans) in a pan and add up curry, cinnamon powder, dangote cubes
- Pour the cow stock in a pot and set to boil. Once the stock boils, add up the fried rice and fried veggies together and stir (Note, the water level should be lesser than the rice level) cover the pot on a medium heat
- Fried rice is ready. Serve with pepper meat and I also add coslow to mine.
I made this version for last Sunday lunch and I simply loved it a lot. My sister loved it too, and both of them enjoyed the meal. Easy and delicious beef and rice stuffed peppers recipe! Fried rice is quite versatile as well; there are so many ways to change it up. My mom adds different vegetables and a combination of proteins depending on I suppose the Guyanese version of fried rice is different because of the inclusion of bora beans and Chinese five spice.
