Vegetables may include tomatoes, potatoes, olives, bell peppers, and hot peppers. Kaldereta is traditionally made with goat meat. Substitutions are common, and particularly during the Lenten season, fish can be used to substitute for the usual meat. I made beef caldereta on my daughters bday! everybody loves it.
Steps to make Fish Caldereta:
- Saute' garlic & onion in the butter. Add water, tomato sauce, tomato paste, seasoning, and fish. Simmer for about a minute then add olives, bell pepper, peanut butter, liver spread.
- Simmer until sauce thicken then add the chili and fresh asparagus. Serve with steam rice.
I used Beef brisket because of its grains. Put some fresh pineapple extract and ofcourse shredded cheese. Traditionally, Caldereta is prepared using goat meat. But since it is rather difficult to come by, I opted to cook it with the more easily available meat…beef. Beef is actually the more preferred meat by many.
