- Make ready 500 gms Boiled
- Get 1 Potato (Non-Boiled)
- Get 2 Tomatoes
- Make ready 2 Onions
- Take 1/4 Cup Dahi
- Get 1 Table Spoon Ginger Garlic Paste
- Take 2 Green Chillies
- Prepare Khade Masale
- Prepare 4 Choti Elaichi
- Get 6 Sabut Kaali Mirch
- Prepare 1 Badi Elaichi
- Make ready 1 Tej Patta
- Take 4-5 Laung
- Make ready Spices
- Get 2 Tea Spoon Salt
- Make ready 4 Tea Spoon Dhaniya Powder
- Get 1/2 Tea Spoon Haldi Powder
- Get 1 Tea Spoon Laal Mirch Powder
- Prepare 2 Tea Spoon Jeera Powder
- Take 1 Tea Spoon Kashmiri Laal Mirch Powder
- Take 1/2 Tea Spoon Sonth/ Ginger Powder (Optional)
- Make ready 1 Tea Spoon Garam Masala
- Prepare 1 Tea Spoon Roasted Kasuri Methi

Every home have it's own version and choice of spices to make it. some like to deep fry the vegetables before adding in the curry,some make it in the tomato. Steps to make Mughlai Gobhi Ki Sabzi:
- Wash Gobhi properly, the cut it into medium-small size florets.
- Wash Aloo also properly, peel off its skin & cut in to medium-small size pieces.
- Chop Onions into slices.
- Grind Tomatoes, Green Chillies, Ginger Garlic Paste finely into purée in a mixer grinder.
- Now take a kadhai, add oil in it & keep the gas on medium flame.
- When oil gets heated up, add slices onions in it & fry them till they are golden brown in colour.
- When they start changing colour into golden brown in colour, turn off the gas & take them out in a plate because after taking them out their colour will change quickly as there is over cooking properties in onions.
- Now let them cool down for some time
- Meanwhile, take a big pot, add 1 Litre water in it with 1 Teaspoon Salt, keep the gas on medium flame & let it boil.
- When water starts boiling, add aloo pieces & Gobhi florets in it & boil them for 10-15 minutes till they become soft.
- After some time, when onions cool down properly, grind them finely into paste or barista in a mixer grinder.
- Now after 10-15 minutes, when Gobhi & aloo becomes soft, turn off the gas, drain out all the water from pot & take them out in a plate.
- Now take a kadhai, add 1/2 Big Spoon Oil in it & keep the gas on medium flame.
- When oil gets heated up, add Khade Masale in it & let them sizzle.
- When they starts sizzling, add finely grinded tomato purée in it with 1 Teaspoon Salt so that they start releasing oil quickly.
- After 5-6 minutes, when oil is completely released, add spices mix with 1/4 Cup Dahi & start stirring them immediately so that dahi doesn’t get burned.
- Roast them for 2-3 minutes, then add onions barista in it & mix them properly & cook them for 4-5 minutes.
- After 4-5 minutes, add Boiled aloo & Gobhi pieces in it & mix them properly.
- Now turn the gas on low flame, close the lid & cook them for 2-3 minutes.
- After 2-3 minutes, open the lid, add 1 Teaspoon Garam Masala, 1 Teaspoon Roasted Kasuri Methi & mix them properly.
- Your Mughlai Gobhi Ki Sabzi is ready to be served.
