Posto is a classic Bengali delicacy and egg curry is a part of our regular meals. This dim posto is a fusion of these two Bengali classics and it's simply Posto is a classic favorite of all Bengalis! Posto is the Bengali name of poppy seeds or khus khus as called in hindi and the semi-dry curry made with. Perfect one.just cut the eggs in half.looks better.

- Grind poppy seeds, tomato and water to a fine thick paste.
- Boil eggs for 6 minutes.
- Heat up the kadhai add oil and add few pinches of salt and turmeric powder.
- Shallow fry the boiled eggs and keep aside
- Add the rest of the oil in the kadhai
- Add cumin seeds and dried whole red chilli and fry for 1 minute
- Add sliced onion and fry till golden brown in colour
- Add turmeric powder and red chilli powder and mix well
- Then add the poppy seed, water and tomato paste and fry until the oil leaves the paste
- Add salt as per taste
- Add the boiled eggs and simmer for 5 minutes
- Add slit green chillies.
- Add sugar as per taste
- Simmer for 2 minutes and serve hot with parathas
