The inspiration for this cake comes from Diana Sturgis's mother-in-law's German apple kuchen and a fruit cake I once tasted made by the wonderful bake. Fresh fruit baked into cakes provides a nice contrast of taste and texture, but figuring out how to get the fruit to distribute itself evenly throughout the cake can be a challenge. - In a mixing bowl take all the wet ingredients including sugar whisk well with electric beater or manually,
- Now mix all the dry ingredients together, add in whisked wet ingredients and fold gently
- Now shift the cake batter in to greased cake tin, bake it in preheated oven on 180 degree for 35-40 minutes,
- Take out and cool the cake completely, cut the cake in to two layers,
- Apply sugar syrup on the bottom layer of the cake, evenly spread some whipped cream arrange some chopped fruits,again spread some whipped cream on top of the fruits evenly
- Now place other layer of the cake on the top, apply some sugar syrup, evenly spread whipped cream on the top, keep the cake in the fridge at least for 30 minutes, then take out the cake, decorate with some chopped fresh fruits, your delicious cake is ready to serve.
My very first attempt at this cake. Many Many cakes ago. 🙂 It tasted so good even that time! I am much better with whipped cream now. I have been trying to experiment with various fresh fruit flavors in my cake batter when making cup cakes, but find the fruit juices from the fresh fruit seem to mess up the liquid ratio of the batter I make.
