I got this aloo palak recipe from daawat.com, but have adjusted it slightly to my liking. It will serve two as a main course when served with naan bread or rice, or four as a side dish. Steps to make Aloo Palak:
  1. Chop up palak and wash thoroughly under fresh running water to ensure all dirt is cleaned out.
  2. Heat oil in a pan. Add zeera and methi dana. Add 1 sliced onion. Fry until pink.
  3. Add ginger garlic paste. Add slit green chillies. Roast this mixture.
  4. Wash peel and cut potatoes into cubes. Add into oil. Add all spices. Fry for 2 mins until potatoes are mixed with spices.
  5. Add palak into pan. Mix well and fry for few mins. Beat yoghurt and add to pan. Mix well.
  6. Cover and let it cook over medium heat.
  7. The veggies will cook in their own juices and dahi. Only if needed you can add a little amount of water.
  8. When potatoes are tender and palak is roasted the dish is done. Serve and enjoy!
