The ingredients needed to make Fried matumbo(tripe):
  1. Take 150 g tripe
  2. Get 1 onion
  3. Make ready 2 tomatoes
  4. Make ready 1 green chili
  5. Make ready to taste salt
  6. Prepare 3 cups waters
  7. Take 1 tbsp cooking oil

It's cooked dry fry and very spicy and served with ugali. Matumbo also known as tripe is a common delicacy in any Kenyan home which is loved by many. Matumbo is a swahili word which in this context loosely translates to innards. The western world refers to matumbo as tripe and I was pleased that they too indulge in this delicacy.

Instructions to make Fried matumbo(tripe):
  1. Thoroughly clean the tripe. When clean cut into pieces
  2. Add the matumbo into a sufuria add the water and cover and boil.
  3. When soft drain the excess water remaining. Chop the onions and tomatoes and set aside
  4. Add the cooking oil in a sufuria once heated fry the onion till brown
  5. Add in boiled matumbo(tripe) and stir. Add the tomatoes and cover.
  6. Stir some more and add in the salt. Serve when ready
