  1. Take 1 kg mutton
  2. Prepare 1 kg rice
  3. Get 3-4 onions
  4. Take 3 tomatoes
  5. Take 1 cup curd
  6. Get 1/2 grated fresh coconut
  7. Get 1 bunch mint leaves
  8. Take 1 bunch coriander leaves
  9. Prepare 8-10 green chillies
  10. Prepare 2-3 tablespoon ginger garlic paste
  11. Take 1/2 teaspoon turmeric Powder
  12. Make ready 1 tablespoon coriander powder
  13. Get 1 tablespoon cummin powder
  14. Take 1 tablespoon garam masala powder
  15. Take 1 handful Khada garam masala(clove, cardamom, shahi jeera, cinnamon, star anise, black pepper etc)
  16. Get to taste Salt
  17. Make ready as needed oil
  18. Take 1-2 tablespoon ghee
  19. Get as needed Food colours(orange and green)
  20. Make ready 1 teaspoon lemon

  1. Slice onion
  2. Chop tomatoes
  3. Clean and wash mint and coriander leaves
  4. Heat oil in a vessel add onion and fry till golden brown, take out some for later use,keep it on tissue paper.
  5. In same oil add ginger garlic paste saute, add chopped tomatoes
  6. Now add washed mutton, salt garam masala, turmeric powder, cummin powder,coriander powder and fry for 3-4 mins.
  7. Now add well beaten curd mix and cook till mutton cooks 80%
  8. In a jar add green chillies, mint, coriander leaves and grated coconut make a fine paste
  9. Once the mutton is soft add grinded masala and cook further for 10-15 mins.
  10. In another vessel keep water for boiling
  11. Add khada garam masala drops of lemon and let it boil
  12. Once the water is boiling add soaked rice and cook only 75-80%
  13. Now drain the water
  14. In same vessel spread the cooked rice on that give a layer of cooked mutton
  15. Sprinkle some onion and add little oil
  16. On top again spread cooked rice on that sprinkle fried onion, mint coriander leaves and two colours of food colour.
  17. On top add little oil or ghee
  18. Keep on dum till the nice aroma start coming from biryani.
  19. Your delicious biryani is ready to serve with raita.
