The ingredients needed to make Schezwan Fried Rice:
  1. Get 1 cup Basmati/Long grain rice
  2. Make ready 1 tbsp oil
  3. Get to taste Salt
  4. Prepare 4 cups water
  5. Take 2 tbsp sesame oil
  6. Get 1 tbsp finely chopped garlic
  7. Get 2-3 spring onion finely chopped into whites and greens seperately
  8. Prepare 1/4 cup finely chopped bell peppers
  9. Prepare 1/4 cup finely chopped cabbage
  10. Take 3 tbsp french beans finely chopped
  11. Prepare 1 small carrot finely chopped
  12. Make ready 3-4 tbsp capsicum finely chopped
  13. Get 3-4 tbsp Schezwan sauce - ajust
  14. Make ready 1 tbsp soy sauce - optional
  15. Get 1 tbsp tomato chilli sauce - optional
  16. Take 1.5 tbsp vinegar
  17. Get to taste salt and pepper

It is very easy to make. Basically schezwan pepper is used to make this rice spicy. But it is not available easily. Schezwan style fried rice, an Indo-Chinese version with the ingredients availabe in our pantry.

Steps to make Schezwan Fried Rice:
  1. Clean and soak rice for 30 minutes. Drain excess water and keep it aside
  2. Heat water in a vessel, add 1 tbsp oil and salt. Bring water to boil
  3. Add the drained rice and mix well
  4. Cook until rice is al dente, it should be only 90% cooked. Drain excess water immediately to prevent further cooking of the rice
  5. Rinse through cold water, this will prevent rice grains sticking. Once rice is cooled and drained, refrigerate for 30 minutes. This will give perfect texture to rice
  6. Heat sesame oil in a pan. Add garlic and white part of spring onions with little green onions. Saute for 2-3 minutes
  7. It's advisable to use blanched french beans, in case you haven't, add them to pan now
  8. Saute for 2-3 minutes
  9. Add all veggies and mix well.Saute until they are tender yet crunchy
  10. Add salt and pepper. Mix well
  11. Mix all sauces in a bowl,you can skip the other sauces and add only schezwan sauce but the addition of other sauces renders the right taste to the dish
  12. Add the sauces to the pan and mix well
  13. Add vinegar and mix well. Let the sauces bubble nicely over high heat
  14. Add in the rice and gently mix without breaking the grains until rice is well coated with sauces
  15. Keep on tossing on high flame for 2-3 mins and adjust the seasonings if required
  16. Garnish with chopped Spring Onion greens and serve hot as is or with any Manchurian gravy
